- 6 tsp fruit-sweetened dried cranberries
- 1/4 cup brown rice syrup
- Zest and juice of 1 orange
- 2 tsp Dijon mustard
- Pinch cayenne pepper
- 6 cups mixed salad greens
- 1/2 cup pecan halves, toasted
- 2 crisp apples, peeled, cored, and cut into 1/2-inch dice

- 1 medium yellow onion, peeled and diced (about 1cup)
- 3 celery stalks, diced (about 1 cup)
- 6 cups, vegetable stock or low-sodium vegetable broth
- 2 small zucchini, diced
- 2 small yams, peeled and diced
- 4 bay leaves
- 2 tsp thyme
- 3 to 4 ears com, kernels removed (about 2 cups)
- 4 cups packed spinach leaves
- 2 medium carrots, peeled and diced (about 1 cup)
